Sometimes it’s simply cold and just the perfect weather for comfort food.

Maybe you need a hearty meal in less than an hour. If you have thawed meat on hand, this is a quick fix!

This creamy soup has become a family favorite and even my babies’ eyes light up when they find out that mom is making Cheeseburger soup!

I don’t hesitate to serve this to guests, take to potlucks, take to a friend if they are going through hard times, or just had a baby. It gets all the raves!

I always make at least a double recipe and sometimes a HUGE pot, just so we can have leftovers for a few meals. It also freezes nicely, so don’t hesitate to pop a few containers in the freezer for easy meals in the future!

Couple it with some fresh, hot homemade bread or dinner rolls and you will enter the prize-winning realm of awesomeness!

Creamy Cheeseburger Soup

Servings 6 people

Ingredients

  • 1/2 lb ground beef
  • 1/2 cup onion chopped
  • 1/2 cup carrots shredded
  • 1 /2 cup celery diced
  • 1 /2 tsp basil
  • 1/2 tsp parsley
  • 2 cups chicken broth
  • 2 cups potatoes diced
  • 1 cup cheddar cheese shredded
  • 4 oz cream cheese
  • 3/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. In large saucepan, brown ground beef and drain. Set aside and saute onions, carrots, celery, basil, and parsley in 1 TBSP butter until veggies are tender, about 10 minutes on med/low heat. 

    2)Add broth, potatoes, and meat, bring to boil. Reduce heat, cover and simmer 10-12 minutes, until potatoes are tender. Add milk and bring almost to boil, remove from heat and add cream cheese, cheese, and salt and pepper. Stir periodically until cheeses are melted. 

    Notes - I usually whisk the cheese cheese into the soup to get the pieces all melted. You could also melt the cream cheese and cheese into the milk in a separate pan before adding. Use low heat!
